Arctic char was among the first freshwater fish to immigrate to Norway after the last ice age. Today, the char can be found throughout northern Norway, up to 1000 meters above sea level, and is considered the northernmost of all freshwater fish species.
Arctic char is a characteristic Arctic fish in the salmon family that thrives best in cold, oxygenated, and clear water.
Kirkenes is the only place in Northern Norway where land-based farming of this species is carried out. Here we have ideal conditions for farming due to abundant access to clean and cold freshwater.
The char served in southern Varanger is local and therefore of the best quality. It is usually served fried, but is also good in fish soup and on the grill.
